Summer Squash Lasagna



-1 tbsp coconut oil

-12 medium sized tomatoes

-1 pound pastured pork sausage

-3 medium sized squash of your choice

-Your choice of shredded cheese to your liking



Preheat oven to 350 degrees.

Add 1 tbsp of coconut oil to large skillet on med high heat. Once hot, begin browning sausage. While the sausage browns, put tomatoes in food processor until they are coarsely crushed and sauce like. Add your favorite herbs, salt and pepper to tomato “sauce”. Shred however much cheese you would like to add.   Slice squash into long, thin slices. Use coconut oil to grease 9×9 baking pan.

Put a little bit of sauce in baking dish and cover the bottom with a layer of squash. Add a layer of meat, sauce and cheese. Add another layer of squash repeat steps until pan is full or you run out of ingredients.

Cover with foil and bake for 55 minutes.
