Supreme Kale Salad

Supreme Kale Salad VN, GF, SF Ingredients:
1 lg bunch organic kale
1 organic carrot, finely grated
1 clove garlic, finely chopped
2 organic green onions, chopped
1/4 to1/2 C cold-pressed olive oil
3 tbs apple cider vinegar, OR 2 tbs fresh organic –lemon juice, OR 1 tbs umeboshi vinegar*
1 tbs pure maple syrup OR unpasteurized honey**
1 tbs toasted sesame oil OR cold pressed –sesame oil**
2 tbs wheat-free tamari sauce(I use BRAGGS aminos)
1/4 cup nut or seed milk such as hemp or sesame (almond or coconut work great)
*** 3 tbs sesame gomasio OR sesame seeds ***
1/2 tsp cayenne powder
1 tbs dried organic basil OR a handful of fresh home –grown or organic chopped basil
1/4 cup Red Star nutritional yeast
1/4 to 1/2 cup organic raw sunflower seeds

Directions: Wash a big bunch of organic kale with filtered water. Shake off water and cut kale off each side of stalk, then fold together and chop up into bite sized pieces.(Sometimes I blanch the kale to make it more tender, esp if it is the curly). Place in a big bowl. Keep stalks for soup or sauteing. Add rest of vegetables to kale. Pour on evenly, next six ingredients. Sprinkle on evenly, remaining ingredients. Toss well and taste. Adjust to your liking and enjoy! Chew this salad well and take your time savoring all the flavours. This one does not keep long after it is dressed! Replace your everyday salad with this one once in a while!
Notes * Be careful with umeboshi vinegar as it is quite salty.
** For a raw food recipe use the unpasteurized honey and cold pressed (untoasted) sesame oil options.
*** if you are salt sensitive or if you are using the sesame gomasio option, you may wish to reduce the salt in this recipe.

This is a great salad for potlucks. You can get creative & add broccoli slaw or cranberries or substitute cilantro for the basil. Have fun with it & enjoy!
